		<description>This recipe inspired me to try making spelt for first time. I used about half of a large sweet onion, finely chopped, instead of shallots.  For the rissotto, I used white wine and chicken broth. I added the wine first- enough to cover the farro, then after that was absorbed , added enough broth to cover it until absorbed, then kept repeating these steps until the farro was chewy. It took almost an entire quart container of chicken broth , at least half bottle of white wine.  (rest went in my glass).  I only stirred every few minutes, not constantly. Spinach was one box of frozen, already chopped that I microwaved. At end, I added a couple of handfuls of hazelnuts that I smashed up in plastic bag, using bottom of cup as smasher. (these might be better toasted- next time).  my dinner guests being allergic to shrimp, I used 4 chicken thighs -- browned, then baked with tapenade, sundried tomatoes, olive oil and wine for about an hour, then shredded. It served 5- every drop gone and lots of rave reviews.   Thanks very much.</description>
