I remember my mom used to cook with rhubarb. I think she would make rhubarb pie. It was delicious. But I will confess I have never done it. I think I’ll have to give it a try. Thanks for this recipe…and the nudge to try something new!

We were so excited to find rhubarb at the markets here too. I’ve had little success growing it, but we love it so much that we keep our freezer stocked when it becomes available. Your mousse is a wonderful idea — I’ve never used rhubarb in this way, only in pies, etc.
