It was to mimic risotto. Going to have to try it with these larger noodles. I do love how the pasta absorbs the broth and gets so flavorful. I have cooked pasta by the absoprtion method before, like for rice or risotto but I never knew it was a legitimate Italian method LOL I thought it was my secret lazy way and never dared tell anyone !!! Hahaha This looks wonderful and I can say that I actually prefer this method as the flavour is even better than boiling and draining! Silvia – this is so funny!
