I've noticed this too. And you know, I've only had a pizza with shaved truffle on it at an organic, high end restaurant I worked at in Atlanta. Other than that nothing. Your shrimps look so fresh and red though, and this whole plate is beautiful-me likes! p.s. your shrimp has so much of that red color in it-that's a carotenoid that is one of the most powerful carotenoids one can eat-nice!
